Never thought I'd be eating greens without simmering them with ham or some smoked turkey wings.
Here's my modified version of Curried Collard Green Salad. The original recipe was found on the Gone Raw site.
Curried Collard Green Salad
Ingredients
Ingredients
1 green onion, chopped
1 small vine tomato, chopped
Corn cut fresh from 1 cob
1/2 - 1 jalapeno pepper, seeds removed, diced
1/3 - 1/2 avocado
6 large collard green leaves, deveined
fresh black pepper, salt, curry powder, and lime to taste
2 tsp olive oil

2 tsp olive oil
1 tsp raw apple cider vinegar
What to do
Chop the greens into small pieces, about an inch or so in size.
Mix in seasonings, lime, olive oil and vinegar.
Let marinate for a couple of hours or longer (otherwise they may taste too bitter/strong).
Top with other fresh ingredients.
Mix together and enjoy.

I come from a family where we cook our collard greens in fatback and neckbones so when I ventured to try this raw food dish, I was hesitant. HOWEVER, I liked it. I really, really liked it!
I'm glad you like it! It scared me a little too, but I was glad I tried it.
Love this recipe! I substituted Franks red hot hot sauce for the jalapenos.. tastes great.
