Breakfast: Berry Porridge topped with banana mylk
The porridge recipe from Juliano's Raw, the UNcook Book consists of oat groats (soaked overnight and drained), dates and blueberries. Instead of the 1 serving the book indicated, it made about 6! It's very filling and takes time to chew. The recipe indicated the groats could be soaked for as little as 30 minutes, but I find them tough and odd tasting unless they've been soaked for hours.
1 cup coffee (non-raw)
Snack: a couple of carrots
Lunch: 1/2 cantaloupe
Snack: Smoothie of kale, strawberries, peaches, bananas and coconut butter
Dinner: corn salad on a bed of spinach
Today was a good day for healthy eating and working out. This week's CSA basket had lots of goodies including: garlic, onions, nectarines, peaches, oranges, kale, apples, potatoes, lemon basil, thyme, carrots, string beans and other goodies --all local and organic.
